Originally an Italian ewes' milk cheese, Asiago is now made from cows milk. A semi-firm cheese, it has a glossy rind covered in black wax and has a yellow interior, with small eyes. Asiago has a nutty richness and sharp tang and is suitable for grating, or as an after-dinner or snack cheese. Both American and Italian versions are offered, and asiago is also available shredded.
Serve with
Wine Pairing: Reds like Barolo and Chianti (Sangiovese) or a rich Napa Cabernet Sauvignon, Bourdeaux, Brunello, Grenache, Meritage, Tempranillo, Zinfandel.
Other beverages: Cider, cranberry juice and sparkling red grape juice
Food: Apples, pears, red or green grapes, figs, crusty breads and pasta.
