Roquefort, a legally-protected cheese made in France from ewe's milk, is
extraordinarily delicate and subtle, with none of the harsh overtones which
typify many other Blue cheeses. Its sheep-milk origin is easily detectable in
both flavour and aroma. Eaten as a dessert cheese, it is also used in spreads
and salad dressings.
Wine Pairings: Sauternes and Roquefort make up one of the classic wine and
cheese combinations.
