Chèvre is the French word for goat, and Chèvre cheese is made entirely of goats' milk. Chèvre is more pronounced in flavour than cheese made with cows' milk, and is easily digested. It marries well with onions, eggplant, peppers, zucchini and other vegetables.
All Canadian goats' milk cheeses handled by Springbank Cheese are made with microbial enzymes, rather than animal rennet, and contain no additives or preservatives. These goats' milk cheeses are available in two sizes of logs, plain, or seasoned with chives, garlic, herbs, and pepper, which are excellent spread on crusty bread; in bricks, sliceable, meltable and mild; and as feta, which is preserved in salt brine and often used in salad.
