If the cheese world held a beauty contest, Chèvre Grey Owl would sweep all categories, since it is a visual showstopper. This snow-white cheese contrasts vividly with its dark ash rind. The paste oozes around the edges, reminiscent of a just-melting scoop of vanilla ice cream. Not just visually appealing, though, Grey Owl has a tangy, crisp scent evoking fresh air, a dense texture that is silky smooth and melts in the mouth, and a sweet, tangy, and somewhat lemony flavour. It pairs well with smoked salmon.
Made at Fromagerie Le Détour in Notre-Dame-du-Lac, Quebec, Grey Owl was first introduced to the Canadian market in early 2008. In addition to referring to the colour of the cheese, its name honours the legend of Archie Belaney, one of Canada's first conservationists, also known as Grey Owl. He lived for a number of years on the edge of Lake Témiscouata and passed along to those around the region his belief in the importance of upholding harmony between nature and humans and preserving the wilderness.
Grey Owl is a goat's milk cheese that is made with non-animal rennet and is vegetarian friendly. Once the milk is pasteurized, it goes though a slow coagulation, draining and light-pressing process, after which the cheese is put into moulds. The vegetable ash is sprayed on the exterior seven days into the 14-day ripening process. While primarily decorative, the edible ash helps to counter acidity through its alkalinity and mellows the tang of the cheese.
