Paillot de Chèvre is produced by La Maison Alexis de Portneuf Inc. in St. Raymond de Portneuf, located 50 kilometres northwest of Quebec City on the north shore of the St. Lawrence River. Paillot means straw. Long ago, a single straw was inserted into the centre of goat cheese in order to transport it without damage. Paillot de Chèvre was created to pay tribute to those ingenious ancestors who did everything possible to protect product quality. It is a soft, surface ripened goat's milk cheese, shaped in a traditional log, with long pieces of supportive straw running the length of the exterior, thin, bloomy, white rind. The interior paste is white and firm towards the centre but runnier at the rind. This product is mildly aromatic. The flavour, slightly tangy, lactic and goaty with subtle hints of hazelnut, becomes more pronounced with age.
