Gjetost (Ski Queen)

Norway's traditional brown, fudge-like cheese, Gjetost (Ski Queen) is made from a mix of whey from cow's and goat's milks. When unwrapped from its colourful package, which provides a visual aid for serving (that is using a cheese plane instead of a knife or wire cutter), what appears is a molded semi-firm block that looks like caramel, which is essentially what it is. The milk used to make this cheese is evaporated over low heat to concentrate and caramelize the sugars, which results in a browned and slightly sweetened product. Once evaporated to the proper consistency, Gjetose (Ski Queen) is molded into blocks and undergoes no aging, which means that the distinctive taste of fresh goat's milk is still somewhat noticeable.
