Gorgonzola is Italy's principal blue-veined cheese, and has a mild, creamy interior, with a greenish-blue mould, which gives it a sharp, almost spicy flavour. Presented in foil-wrapped wheels, it has a firm, dry, brownish rind. Usually eaten as a dessert cheese with bread (and no butter), it is also an ingredient in some culinary specialties, and adds zest when crumbled into salads or melted over potatoes or steak.

Wine Pairing: Rich reds such as a Sangiovese, Whites such as pinot Grigio or Mascato.
