Produced by La Fomagerie Fritz Kaiser in the province of Quebec, Miranda was the Swiss Cheese Category winner in the Canadian Cheese Grand Prix (Dairy Farmers of Canada cheese competition), 2006. A firm, pasteurized cow's milk cheese, it has a washed and brushed, rose-and-copper coloured rind, which covers a firm, dense, ivory paste. Firm in texture and not very flexible, Miranda is an impressive surface-ripened cheese, aged more than five months (typically eight to twelve), which emits a scent of nuts and wet straw. Its taste harbours hints of spiced nuts and almonds.
