Oka is a Canadian classic, originally made by Trappist monks. It is pressed and surface-ripened, with a dry, firm rind, and supple, tender and soft body. It has a medium-strength flavour, filled with appealing subtleties: mellow, milky, creamy, buttery, and a little bit nutty. Oka, whether regular, classique (classic), light (low fat) or with mushrooms, is ideal on cheese trays.
Wine Pairing: A Pinoit Noir would accompany this cheese well.
