Gorgonzola is Italy's principal blue-veined cheese, and has a mild, creamy
interior, with a greenish-blue mould, which gives it a sharp, almost spicy
flavour. Presented in foil-wrapped wheels, it has a firm, dry, brownish rind.
Usually eaten as a dessert cheese with bread (and no butter), it is also an
ingredient in some culinary specialties, and adds zest when crumbled into salads
or melted over potatoes or steak.
