Gruyère has a hard, yellow to brown rind, with a yellowish-ivory body and
large, regular eyes. Firm and resilient in consistency, it has a mild, hazelnut
flavour, with hints of sharpness and sweetness. Smoked process versions are also
available. Well suited to cheese trays, and an excellent accompaniment to fruit,
nuts and breadstuffs, it is positively unequalled in "au gratin" dishes, and is
the fondue cheese par excellence.
