The archetypal monastery cheese, Port Salut is lightly pressed with a tawny
washed rind and smooth, springy, semi-soft body. The flavour is full and mellow,
with a slight edge, but not as tangy as other washed-rind cheeses. Port Salut is
one of the better mild cheeses, and goes well with fresh fruit.
Wine Pairings: Beaujolais, Zinfandel. Most white wines.
