This cheese is typically made from cow’s milk and has a soft rind of bright tangerine-orange color which allows the cheese to breath out its sometimes strong aroma. The interior is smooth with small holes and has a stretchy texture. Chaumes has a nutty, mild taste, but can sometimes be slightly sharper depending on the maturity of the cheese. This cheese is often compared to Port Salut, and is usually ate alone or grilled.

Wine Pairings: mellow dry to sweet white wine such as: Jurancon, Rosette or Haut-Montravel. Or Dry red such as: Marmandais, Frontonnais, Bergerac, Tursan, or Valpolicella, or even a strong dry cider
