Saint Paulin is a semi-soft monastery cheese, modeled after the original Port
Salut, with a moist, springy, orange rind. The interior is white or light-yellow
in colour. Similar to Oka, it has a tender, creamy consistency. Its flavour,
however, is milder, creamier and more buttery. It is a lovely pre-dessert cheese
and an excellent cooking ingredient.
Wine Pairings: Beaujolais, Zinfandel. Most white wines.
