in colour. It may be mild, medium or strong in flavour, depending on its age. A
medium Cheddar at its prime is neither too mild nor too strong, and has a light,
nutty flavour. It is smooth and firm in texture. Cheddar is a most versatile
cheese. Ideal any time of day and with nearly any meal, it can be used in
countless ways for desserts and in cooking. There are several variations of
basic Cheddar: rennet free, skim milk, and wine-cured.
