Originally an Italian ewes' milk cheese, Asiago is now made from cows' milk. Springbank Cheese offers Domestic, American and Italian versions. A semi-firm cheese that has a yellow interior, with small eyes, Asiago has a nutty richness and sharp tang and is suitable for grating, or as an after-dinner or snack cheese.
