Chèvre is the French word for goat, and Chèvre cheese is made entirely of goats' milk. Chèvre is more pronounced in flavour than cheese made with cows' milk, and is easily digested. Chèvre Wine Cheese (Queso de Cabra al Vino) is an artisan goat cheese from Toledo, Spain. The goats in this region graze on rich grass and wild herbs, which results in flavourful cheese. A firm cheese with a white interior, Queso de Cabra al Vino is cured briefly in red wine, producing a violet or burgandy rind with a hint of the fruit and spice of red wine.
