Borgonzola is a semi-soft cheese that comes in a wheel. Covered with white bloom like Brie or Cambembert, it also has the veins of mold that typify blue cheese, so it's like a hybrid. By itself, Borgonzola has a surprisingly mild flavour for a blue-based cheese. It is not nearly as sharp or sour as one might expect, given its "mouldy basement" smell. This cheese can be served on crackers, works well on a cheese tray, and, if melted, can be served on pizza or mixed with short pastas.
