Small, egg-shaped stretched curd, Bocconcini is a semi-soft cheese that is packed in pails in lightly-salted water. White in appearance, without openings, Bocconcini is tender, soft and slightly resilient in consistency, and has a delicate, fresh and milky taste. It is lovely in fresh tomato salads and is also popular on cheese trays. Bocconcini balls come in three sizes: regular, large, and cherry (mini).
