Le Chèvre Noir is a low temperature pasteurized goat's milk cheese made at the Fromagerie Tournevent in Chesterville, Quebec. This internationally acclaimed goat's milk cheddar was first introduced in 1989 and has won several awards since that timeits. Le Chèvre Noir's brick shape is encased in black wax, which protects the ivory, crystalline interior. A rennet-free product, it is aged a minimum of one year, and is also available as a two-year aged cheddar. Due to its age, the flavours of this cheese are complex and rich, ranging from sweet to nutty with a caramel aftertaste. One of its characteristics is a slight crunch within the creamy texture due to lactose crystals, which develop in small pockets within the cheese and provide added flavour.
Beverage Pairings: Versatile enough to try with port, ice wine, Pinot Noir, Baco Noir, Cabernet Franc, Sauvignon Blanc or a Trappist blonde beer.
