Sao Jorge (Saint George) is a central island in the Azores' archipelago, 900 miles west of mainland Portugal. Lush, sub-tropical mountains rise steeply from the ocean, opening into Mediterranean forests and broad pastures filled with cows from which the Queijo de Sao Jorge (St. George cheese) is made. Saint Jorge is a popular Portuguese classic with roots dating back to the 15th century. This distinctive unpasteurized cow's milk cheese is aged a minimum of three to five months. Tempting one to enjoy the authentic bold flavour are the firm, smooth texture and aromatic smell. Saint Jorge makes a lovely dessert with fresh pears or can be added to everyday dishes calling for a sharp taste to transform them into gourmet delights.
