The "grandfather" of what many in Canada and the United States know as Swiss Cheese, Swiss - Emmenthal Cave Aged is produced in the canton of Bern in Switzerland. Made from cow's milk, it comes in wheels that can weigh as much as 200 pounds. It has a distinctly tangy flavour with a fruity sweetness to the finish and can be paired with a wide variety of fruits and raw vegetables. Along with Appenzeller and Gruyère, Swiss - Emmenthal Cave Aged is one of the classic ingredients in a traditional Swiss fondue.
