Truffle Cheese is available with either white or black truffles therein. Relatively new from Italy is Truffle - Boschetto Al Tartufo Stagionato, an all sheep's milk version of Boschetto, which is made from a combination of pasteurized sheep's and cow's milk. It is a little dryer and sharper than the original version, and is aged four months. This cheese is dotted with rare white truffle shavings, and makes a very colourful and flavourful addition to a cheese tray, but is not good for melting.
