This bold Spanish cheese comes wrapped in Sycamore-Maple leaves that cause
the edge to be slightly sweeter tasting then its centre. It has a rough,
irregular rind with dark shades of grey and some bluish and red marks. The
inside has a soft texture, a pale yellow color and is scattered with small
crevasses in which a white and greenish blue mould can be found. Its flavour is
very strong and fairly spicy, it is greasy and buttery on the palate and quite
pungent. It is recommended for spreading.
