Brick is a rindless, firm, white cheese, with a springy texture, slightly
softer than Cheddar. Its flavour is similar to that of mild Cheddar. It is
available seasoned, rennet free (plain and seasoned), rennet free made with skim
milk (plain and seasoned), and unsalted. Seasonings include caraway, garlic, hot
pepper, and onion and parsley. Brick is good as a snack, in sandwiches or
salads, and in cooking.
Wine Pairings: Serve with light reds, Chardonnay, pale ales or even a cider
for something different.
